Believe or not, any of the Dummies books are always a good place to start for beginners. In fact, there is VOIP for Dummies, Asterisk for Dummies, and Linux for Dummies. When I first got into telecommunications, I started with VOIP for Dummies. I have also read part of Asterisk: The Future of Telephony , but the last publish date was 2005.
